About gin
What it is
A neutral spirit flavoured with botanicals, of which juniper is the only compulsory one. Everything else, the citrus peel, coriander, angelica, orris root, is the distiller's signature.
Where it came from
It began as Dutch genever in the seventeenth century, malty and closer to a light whisky than to anything you would recognise now. London Dry arrived in the nineteenth century, once the column still made a clean enough spirit that the botanicals had nothing to hide.
Worth knowing
London Dry is the dry, juniper-forward standard. Plymouth is softer and earthier, and is protected to a single distillery. Old Tom is lightly sweetened and sits between genever and London Dry, which is why it turns up in older recipes. Navy Strength is the same gin at around 57%. Contemporary gins dial the juniper back and push a single botanical forward, which is worth knowing before you put one in a Martini.
