White Negroni

The Negroni with the red taken out: Suze's gentian bitterness in place of Campari and Lillet Blanc in place of sweet vermouth. Paler, drier and more floral.

What cocktail can I make?

Where it came from

Wayne Collins created it in 2001 in the Médoc, near Bordeaux, while he and Nick Blacknell of Plymouth Gin were in France for Vinexpo and Collins was competing in a Drinks International contest. With no bars nearby, they bought supplies at a local shop and Collins suggested making Negronis with French ingredients. It spread slowly because few bars stocked Suze: Audrey Saunders put it on the menu at New York's Pegu Club, Jim Meehan printed it in The PDT Cocktail Book, and US imports of Suze from 2012 did the rest.
