Ramos Fizz
Henry Ramos created it in New Orleans in 1888. It's all in the shake. Two minutes of it gives the drink its tall white head.
What's in it
- 45ml (1½ oz) Gin
- 15ml (½ oz) Lime juice
- 15ml (½ oz) Lemon juice
- 30ml (1 oz) Sugar syrup
- 60ml (2 oz) Cream
- 30ml (1 oz) Egg white
- 3 dashes Orange flower water
- 2 drops Vanilla extractIt's in the official recipe. A pinch of vanilla sugar does the same job, or leave it out.
- to top Soda water
How to make it
- Put everything except the soda water into a shaker with ice.
- Shake for two full minutes, then strain the drink into a spare glass to take out the ice.
- Pour it back into the empty shaker and shake again, with no ice, for one minute.
- Pour into a highball and top slowly with soda water, so the foam rises above the rim.
